Zum Vorkommen antikanzerogener Substanzen in Lebensmitteln, speziell in milchsauren Produkten

Abstract: In cancer research the prophylactic aspects gain in importance. Prophylactic means consists of optimal nutrition habits for this purpose, especially the uptake of naturally occurring anticancerogenic substances in food substances. In addition to certain vitamins and trace elements some active substances in fermented foods are of increasing interest. Investigations so far show that beneficial influences can be obtained with lactic acid bacteria and that the consumption of fermented products seems to be a practical contribution to cancer prophylaxis.
