Abstract: Nutrition and the quality of food related to nutrition is very often seen from the point of view of health tolerance. The linking-up of nutrition with nearly all areas of life is the reason for the necessity of an extension of the normal way of looking at science of nutrition, which means much more than the optimum supply of the human organism with vital nutrients. The health aspect of nutrition has to be completed by ecological and social matters. All three points of view are considered simultaneously in ecology of nutrition.Ecology of nutrition, an interdisciplinary science, includes the interactions of nutrition with an individual, the environment and the society. Ecology of nutrition wants to develop practicable, future oriented nutritional concepts, which are characterized by a very high total tolerance, environmental tolerance and social tolerance.
