Essentielle Fettsäuren und ihre Bedeutung in der menschlichen Ernährung

Abstract: Although retrograde, in Germany the uptake of fat is still too high. However, in spite of this fact the supply of esssential fatty acids is rather marginal. Their functions are manifold. One important role of the essential fatty acids is their function as precursors of mediator substances. Disorder in the metabolism of the ssential fatty acids may result in an unbalance of the mediator substances being formed. As a result therof diseases, as for instance neurodermitis but also atherosclerotic changes, are discussed. An increased uptake of essential fatty acidsa and an eventually aimed supplementation of single fatty acids may be of certain importance in the treatment and prevention of certain diseases.
