Abstract: Nutrition, especially a satisfied sufficient with calcium is important for prevention and therapy of osteoporosis. Apart from calcium and other micronutrients, which have an influence an bone metabolism there are other food ingredients, which interact with the bioavailability of these nutrients. The effect of some of these ingredients and the consequences for cooking practice will be shown.
