Abstract: Essential nutrient deficiency - and also excess - tends to have more dramatic consequences for the rapidly proliferating cells of the immune system than for other tissues. A critical review is attempted about the effect of ascorbic acid, pyridoxine, vitamin A, vitamin E, magnesium, zinc, and iron on some immunological parameters. In order to be able to discuss causal relationships, studies on singular nutrient deficiency or excess were considered as far as possible. The fact that quantitative and qualitative malnutrition causes a breakdown of immunological defense is well documented by epidemiologic studies and animal experiments. Research focussing on the special role played by certain nutrients in an immunological context is still in its initial stage. Should the specific immunological function of a certain nutrient be clarified on the rnolecular level, in vitro methods with isolated immunocompetent cells are the most promising.
