[Classification of dietary proteins and several problems of nutrition]
The author has considered some problems of nutrition with reference to the rational classification of food proteins based on two new parameters: compensation coefficient characterizing phase 2 of protein assimilation, and potential biologic value determining the quality of the amino gram of its essential amino acids. Thus, when a diet is devised for uremia patients I class proteins (milk and egg proteins) should be used, yielding the lowest amount of final products of amino acid metabolism. It is shown that vegetarianism can be theoretically validated, because certain proteins of class III, mainly those of vegetable origin, induce compensation phenomenon in the body: reduced catabolism of protein-deficient essential amino acids. Some other considerations with respect to diet therapy and rational nutrition are presented.
