Ernährung im Ayurveda

Abstract: The importance of nutrition in Ayurveda and the effect of food on the human organism is discussed. The basis for an understanding of these doctrines lies in the concept of three biological forces acting in the human, Vata, Pitta and Kapha which are made up of the five great elements. The concept of Dosa also serves as an explanation for biological rhythms as well as the description of effect the effect of food on man. Ayurvedic science classifies food according to six tastes (Rasa), i. e. sweet, sour, salty, pungent, bitter and astringent and qualities (Guna). Effect of food after digestion (Vipaka) and general effects on the organism (Virya) are also described. With examples of food and spices these concepts are explained.
