Abstract: "The Riesling is the king of all grapes for the production of fine wines. There is no wine made of other grapes which has this fine aroma and can be stored as long as the Riesling. The quality of the Riesling can only be achieved by cultivating it in a corresponding location and mainly by the appropriate overmaturity of the grapes.", wrote a famous oenologist 150 years ago and his statement is still true today.German Riesling wines are characterized by fresh, elegant and fruity acid, which harmonizes well with alcohol and sweetness. This backbone is common to all Riesling wines, no matter where they have grown. At the same time they are complex, very specific and characteristic for their origin.The unmistakable taste of this kind of wine is considered to be the model for all fruity white wines all over the world. Connoisseurs are enthusiastic about the markedly acidic German Riesling. So hard, rough, dry kinds of wine can let themselves be seen at every table. Steely, acinous, flowery kinds of wine distinguish themselves as aromatic cabinet wines by their special digestibility. They lead up to the elegant, mature, juicy and often very fruity late vintage. Superior wine and choice wine made from selected grapes left to partly-dry on the wine are considered to be quality wines, and with their fullness and flavoring they are regarded as the ultimate taste.Riesling wines are worthy of attention not only for reasons of local patriotism, history and culture but especially medical research during the last years makes them an interesting subject. Scientific data which are present so far are not enough in order to make a final statement. In this case there exist deficits which could be minimized by further examinations.Phenomena like the "French paradox" for the French red wine could be true for the German Riesling in the case of other organs, maybe in the form of a "German paradox".The most promising organs seem to be the gastro-intestinal tract as well as the general metabolism.
