Differenzierung des Nahrungsphosphors und Bestimmung des Zinkgehaltes in kompletten Tagesverpflegungen

Abstract: The daily intake of phosphorus (P) in western diets is much higher than the recommended dietary allowances. A great part of P in foodstuffs is bound in the form of phytic acid (myo-inositol-hexa-cis-dihydrogenphosphate). Phytic acid (Pa) is widespread in many plants especially in seeds. P, bound in Pa, is hardly available in the human gut. In FRG no data exist concerning daily intakes of Pa with mixed or with vegetarian diets.We developed an analytical scheme which enabled us to differentiate between various types of P in complete hospital diets. According to the analytical scheme we measured total P (Pt), extractable P (Pex),inorganic P (Pi), and phytic acid P (Pp).Further we measured the zinc content an d calculated the molar ratio of phytic acid/zinc, which is an indicator of the bioavailability of zinc in foods.
