Krankenhauskost - Vorbild richtiger Ernährung?

Abstract: In view of the fact that diseases based an inadequately balanced diets are an the increase, hospital diet has gained in importance. Three quarters of all inpatients in Federal German hospitals are getting a full (i.e. unrestricted) diet. It is the aim of this diet to cover the requirements of essential nutrients and energy "taking present-day knowledge of preventive medicine into consideration" in accordance with Federal German associations for hospital dietaries and nutrition (DAKED and DGE). Arguments in favour of hospital diet being a model for "healthy regimens" are stronger than those to the contrary. The increasing employment of dietary assistants for inpatient care offers a better chance to impart knowledge of best possible and healthier diets even to patients not in need of a specific diet, in accordance with individual requirements and state of health. Long-term experience in this field has been collected at Freiburg university.
